Chicken Cutlet with Cilantro Dipping Sauce

I don’t know the secret to getting toddlers to eat green stuff. Mine typically predetermines that the green stuff is best suited for the floor during her meal; however, if we place the green thing in her mouth, she’ll often eat it.

Some of this ended up on the floor, but some she actually ate. I consider that a success. This recipe is super easy, but the dipping sauce is part of phase 1 of the PPP, so you can make some for you and your toddler if you happen to be on the cleanse.

Pastured Chicken Cutlet with Cilantro Dipping Sauce

Serves 1
Total Time: 15 minutes

1 T avocado oil
1 pastured chicken cutlet cut into strips
2 cups chopped cilantro
1/4 cup extra-virgin olive oil
1/4 tsp sea salt

  1. Heat the avocado oil in a small skillet over med-high heat. Place the chicken strips in the hot pan and sprinkle with sea salt. Sauté for 4 minutes, stirring frequently. Remove from the pan and let cool.
  2. Place the cilantro, EVOO, and sea salt in a high-powered blender. Process on high until very smooth.
  3. Either pre-dip each piece of chicken in the sauce, or, if your toddler is dexterous enough, serve chicken with the dipping sauce on the side.
